Bright fresh aromas of citrus, light watermelon, mineral and cotton candy. Shows a range of complex flavors that carry through on the palate where the texture turns velvety. Finishes with wonderful notes of dried strawberry, herbs and citrus rind. Long, crisp and refreshing.
The Dakota Shy Rosé of Cabernet is made in the saignée-style. We “bleed” small volumes of juice from our freshly harvested and crushed Cabernet tanks and then ferment those in stainless steel barrels. Using a range of white wine yeasts and a long cool fermentation between 45 to 50 degrees – we craft a complex, dry and refreshing Rose.
