Powerful, lush and dense in the mouth revealing layers of dark fruit, chocolate and cassis that shift toward blackberry and mocha notes balanced by dried herbs and spice. Powerful but also beautifully bright and energetic. Impressive combination of concentration and purity. A dark, silky and seductive foreground layered over polished, elegant structure. Delicious now and sure to unfold new layers of flavor and complexity for decades.
We began Dakota Shy with a goal of making a single, great Cabernet Sauvignon. To achieve that, we wanted to source fruit from a range of Napa Valley’s exceptional vineyard sites and build complexity into the wine through different grape clones, soil types, exposures, elevations and regions within the valley. We now work with 16 different growers and purchase fruit from vineyards as far south as Oak Knoll and as far north as Calistoga. Our vineyards are roughly 50% valley floor and 50% hillside.
The Napa Valley Cabernet is crafted with an eye toward luxury and exceeding expectation. Composed primarily of grapes from our hillside vineyards, this is a dense, serious Cabernet balanced with purity, polish and elegance.
