Classic Atlas aromatics with fascinating aromas of golden dried grass, dark raspberry and black fruits. Super textured, complex and concentrated with a gorgeous core of dark fruit compote framed by dried sage, thyme, olive tapenade and black licorice notes. Unbelievable freshness for such a powerful and dense wine. An alluring and complex Cabernet Sauvignon with lingering fruit and herb flavors on the long, plush, fine-grained finish.
While the Atlas Cabernet Sauvignon comes from the Heimark Vineyard in the eastern hills of Calistoga, the wine takes its name from the Titan god, Atlas, who bears the weight of the world and heavens on his shoulders. This remarkably powerful and nuanced Cabernet gets its character from the soils and exposure of the Heimark Vineyard. The exceptional southwest facing hillside-vineyard lies at 900 feet of elevation. Its soil is made up of fractured volcanic material that is extremely rocky and well drained and forces the vines to develop deep root systems.
Dakota Shy sources Cabernet from three blocks at Heimark and has made a single-vineyard “Atlas” Cabernet Sauvignon since the 2014 vintage.
